LAS VEGAS (July 16, 2014) – Bellagio Resort & Casino will partner with Huneeus Vintners for a wine pairing dinner featuring award-winning chef Michael Mina at his eponymous restaurant, MICHAEL MINA Bellagio Wednesday, August 20 at 7 p.m. The event will tantalize taste buds with a six-course menu created by Mina and MICHAEL MINA Bellagio Executive Chef Ben Jenkins. Each course will be paired with wine selections chosen by the evening’s hosts, Chef Michael Mina, Bellagio Director of Wine and Master Sommelier Jason Smith and Master Sommelier and Huneeus Estate Director Larry Stone.
Huneeus Vintners includes Quintessa, Flowers Vineyard & Winery and Faust, three wineries managed by vintner Agustin Huneeus, a wine expert who has been discovering great vineyards around the world for 50 years. Quintessa produces a red Bordeaux style blend of five varietals grown on the estate: cabernet sauvignon, merlot, cabernet franc, petit verdot and carménère. Flowers focuses on lively and complex chardonnay and pinot noir from the coolest areas of the Sonoma Coast. Faust offers a full bodied, decadently rich and unctuous cabernet sauvignon blended from vineyards on the valley floor and steep hillsides.
The pairing menu will include:
- Chef’s Selection of Canapes; paired with Illumination Sauvignon Blanc;
- White Asparagus, complemented with king salmon and Osetra caviar; paired with Flowers Chardonnay;
- Hudson Valley Foie Gras, seasoned with lavender and plum; paired with Flowers Pinot Noir
- Roasted California Squab, served with heirloom beets and blackberry jus; paired with Neyen Blend
- Snake River Farms New York Strip, flavored with lobster mushroom and sesame; paired with Quintessa 2010;
- Crottin de Chavignol, served with black mission fig and hazelnut; paired with Faust Cabernet Sauvignon
